The cooking courses of Aroma Italia connect the practical aspect of the lesson with a special emphasis on the raw materials and the origins of a dish to offer an all-round experience.

Our approach is to merge pure enjoyment with a lesson that will enrich your cultural background, making it much more meaningful. You will be able to experience all this by working in well-equipped, professional kitchens, and with highly qualified and inspiring teachers.

Our aim is for you to explore and reach your full culinary potential.  Therefore, the course hours correspond entirely to what we offer – we do not simply want you to sit at the dining table and taste the dishes prepared but also, and most importantly, to ask questions and take part in the culinary discussion, in a convivial atmosphere. 

A welcoming coffee followed by the cooking session where everyone experiments together. Then the tasting begins and opinions of the dishes and wine pairing are exchanged. All of this in an enjoyable and relaxing atmosphere. 

We offer individual lessons, from 3 to 5 hours, or real fun cooking shows for larger groups where you will enjoy taking part in the preparation of a typical Tuscan menu.

PASTA MAKING

Fresh homemade pasta is a must in Italy. The course we offer is focused on two types of pasta – egg and non-egg based – and on the preparation of the appropriate traditional sauce used as a condiment for the pasta dish. You will learn about the typical and unusual pasta shapes, flavoured and filled pasta, and all that is related to the varieties of flours used, as well as the best methods to make a good homemade pasta. There will also be a particular focus on the sauces: whether classic or creative, you will soon discover that putting your “hands in dough” will be easier and more satisfying that what you thought.    
A light starter and dessert will be the right complement to  the tasting of the pasta dishes.

The basic course is suitable also for beginners; for higher levels we offer courses designed ad hoc, based on the needs of the participants.

SUNDAY LUNCH

A variety of crostini as starters, followed by homemade pasta or timballo,  roasted meat or poultry served with potatoes, and cake as dessert. This is generally the most typical Sunday lunch menu, a real and truly ritual which not only resists new culinary trends, but also represents one of the main landmarks in traditional Italian gastronomy.
During the course you will be able to make four dishes respectively for a meat, fish and vegetarian menu, chosen among traditional regional cooking recipes. This will be a new way to discover or recapture past  aromas and flavours and convey them with the same warmth as when they reached us for the first time. 
We will help you select the best recipes for each appropriate level in order to reach the utmost result, and relive a timeless heart-warming ritual of family Sunday lunch.

TUSCAN SOUPS

Traditional soups and Tuscan minestrone soups tell more about our region and its most typical ingredients – beans, bread, oil – than any other dish.

Comfort food for those chilly wintry days, and delicious at room temperature, even in the summer. Though easy  to make, the only rule to follow for making them is to have the freshest ingredients. These traditional soups include: ribollita, pappa al pomodoro, minestra di fagioli, farinata di cavolo nero, carabaccia, ginestrata, zuppa del carcerato, garmugia lucchese, zuppa lombarda, acquacotta or panata – many of which soups have disappeared from restaurant menus. In this course we will bring them to life again, and you will be pleasantly surprised for their simplicity and intense taste.

ITALIAN KOSHER COOKING

Italian Kosher cooking is incredibly rich and present in many traditional regional dishes thanks to the Jewish communities, whose presence in Italy stretches back more than two millennia. From Venice to Rome up to Bra and Monferrato (Piemonte), Livorno and Florence, these are only a few  places where the local culinary traditions have merged with the Sephardic and Ashkenazic traditions creating dishes and cooking traditions which are still now widely spread.  For those wanting to approach Kashrut  cooking, we offer a course with tasty and easy to make recipes, which are also interesting for the history behind them.

For kosher observants we guarantee koshering of our kitchens and equipment under the supervision of the mashgiach, and the use of authorized ingredients and procedures, minutely carried out by our collaborators.

ITALIAN REGIONAL COOKING

Puglia, Sicily, Piemonte, Tuscany, Venice, Milan, Naples, Rome, Cinque Terre: where would you like to go and eat today? With the course on Italian regional cooking, you choose the place and we will suggest a menu – meat, fish, vegetarian – to take you on a journey, filled with flavours and aromas, to the destination of your dreams. It will be a journey full of stories, anecdotes, ingredients and recipes which will enable you to disclose, through the food and the wine, the sometimes forgotten and less known parts of Italy. 

You will learn about, and appreciate, the excellencies of the Italian territory, from traditional  balsamic vinegar to extra virgin olive oil, from parmesan to buffalo mozzarella cheese, from prosciutto to tomatoes. From region to region, we will disclose the distinctive characteristics of those ingredients for which Italy is famous all over the world.

GLUTEN FREE ITALIAN COOKING

Italy has always been a gastronomic surprise, and for this we have thought of a course to show you the gluten-free side of Italian and regional cooking. No industrial mix, no semi-finished products, no ingredient substitutions, but recipes created from ingredients which are naturally gluten free, and are representative of local traditions. The course has been designed to take you on a culinary journey of discovery (and rediscovery) of well and not so well-known dishes, from the north to the south of Italy. 

The course will be lead by one of our chefs, authorized (Legislative Decree n. 193/2007 and European Regulation (EC) 852/2004) to teach gluten-free Italian cooking. We take great precautions to ensure proper hygiene in the kitchen and cleanliness of the tools used to minimize the risk of any possible contamination. 

The complete absence of contaminating agents cannot be guaranteed as our school kitchens are for multi-purpose uses.

RICE AND RISOTTI

What is the secret of a good risotto? Whether you want to make a creamy risotto, well cooked or wavy (looser), what variety of rice do we use? Soffritto: yes or not? Water or stock? How long should the toasting time be? And, what about deglazing with wine? What should we use for the creaming finishing touches? This is what the chef is frequently asked when it comes to rice. Rice is such a versatile ingredient used not only for risottos, but also for other preparations, sweet and savoury, traditional and innovative, regional and ethnic.

The many rice preparations include: supplì (balls made with rice), rice fritters made on Saint Joseph’s day  (19 March), the tiella barese with potatoes and mussels,  rice cake, tomatoes stuffed with rice,  arancini (stuffed rice balls from Sicily), curry rice pilaf, rice salad. And, for each there is an appropriate variety of rice. Rice is the protagonist of our course, rice from starter to dessert…..as long as it is not parboiled!

BREAD AND FOCACCE

The art of bread making has always been fascinating, and undeniably seductive. Who has not longed, once in their lifetime, to experience the flavour, texture and scent of fresh baked bread. The focus of our course is to learn about the different types of flours, appropriate rising times, how to create and nurture sourdough, bread baking in our own home ovens. You will learn to create different types and shapes of breads, from regional and classic to seasonal breads like, for example, “pan di ramerino” (bread with rosemary), and there will also be room for the varied and tasty world of focacce.
There are many different types of focacce: croccantella, fiorentina, Genovese, pugliese, from Recco, stuffed and wholemeal…and other types that we can make by optimizing dough performance and rising times and recreate, in our own homes, the emotion of being part of those who make one of the world’s oldest foods.
