AROMA is what makes food memorable.

AROMA is what a cook is able to achieve by combining “smell” and “taste”.

AROMA is the “persistence of memory”. Food aromas trigger memories reminding us of the sweet taste of dough kneaded by skillful hands on an antique Florentine wooden table, of the smell of rosemary carried by the wind or of a vegetable garden with full rich flavour tomatoes right in the midst of the Tuscan countryside. It also recalls our grandmother’s steaming stock or the sound of simmering ragout in the narrow streets of old Naples.

Aroma describes what Florentine-ness is  through Cristina and Gabriella’s experience and professionalism, as they both live in Florence

 

Art

To fully understand what Italian cuisine is all about one must refer to Cristina Blasi and Gabriella Mari, who have directed the Florentine School of Culinary Arts Cordon Bleu for over 30 years. They have created Aroma aiming to transmit to all those who have a passion for cooking the techniques, tricks and secrets which are essential in order to be able to well execute the recipes of the Italian tradition, and more.

Cooks are empowered with magical skills, which enable them to transform the ingredients into “stories” rich in taste and emotions. In fact, Italian cuisine is full of stories. Think about bread, ice cream, pizza, olive oil, chocolate, handmade pasta and many other protagonists of a cuisine which, for many, represents a way of life.

Cooking is to know about primary sources; it is the story of a dish and its evolution; it is culture and art expression.
